Recipe of the Week: Mango Salsa

Prep time: 15 minutes


1 1/2 cup mango (about 2-3 fruit) peeled and cubed

1 cup tomato chopped with seedy pulp removed

1 avocado pitted and cubed

1/2 cup corn

1/4 cup cilantro freshly chopped

1/2 teaspoon garlic minced

1 tablespoon chipotle in adobo sauce (just the juice)

1 tablespoon lime juice

1 pinch salt

1 pinch pepper


In a large bowl, toss together mango, tomato, cilandro, corn garlic, chipolte in adobo juice, lime juice, salt, and pepper.
Add avocado and gently toss in with the rest of the ingredients. Doing this step last will help prevent the avocado from breaking apart.
Let mixed salsa rest for at least 10 minutes before serving. Store salsa in the refrigerator until ready to serve.
