Cinnamon Oatmeal Pancakes

Prep/total time: 20 minutes

Makes: 2 servings

Yields: 4 pancakes

Ingredients: 

1/3 cup whole wheat flour

3 tablespoons quick cooking oats

1 tablespoon flaxseed

1 tablespoon ground cinnamon (or to taste)

Dash of salt

1 brown egg

1/2 cup of skim milk

1 tablespoon brown sugar

1 tablespoon canola oil

1 tablespoon vanilla extract

Directions:

Combine first 5 ingredients in a bowl. Combine and whisk the rest of the ingredients into another bowl. Combine both bowls and stir until into a batter. Pour batter onto a brittle covered in cooking spray. Cook until one side is brown and then flip.
