12 eggs (or as many as you’re going to eat!)
1 red pepper
1 yellow pepper
1 tbs olive oil
Heat a large, non-stick pan to a medium heat. Cut peppers thin. Add one tablespoon of olive oil to the pan. Place pepper rings in pan and sauté for 1 minute. Crack one egg in each pepper ring. Put cover on pan and let it sit for 2-3 minutes (for over easy). Serve and enjoy.
