No-Bake Energy Bites
Preparation Time: 10 minutes
Total Time: 20 minutes
Yield: About 20
1/2 cup of creamy peanut butter
1/3 cup of honey
1 tsp of vanilla extract
1 cup of old fashioned oats (raw)- I use Quaker Oaks (Heart Healthy =])
1/2 cup of ground flaxseed- I use Wild Oats Organic
Handfull of chocolate chips- Don’t let that sway your creative mind! I use Butterscotch as well!
In a mixing bowl, stir together peanut butter, honey and vanilla extract. Add remaining ingredients and stir until evenly coated. Shape into 1-inch balls. Store in refrigerator in a container.
